Chocolate Ginger Puddings
Butter 720g
Sugar 720g
Flour 1050g
Eggs 12
Baking Powder 90g
Salt 6g
Milk 150ml
Melted Chocolate 800g
Crystallized Ginger 450g
Ginger (ground) to taste
Cream the butter and sugar until well mixed. Add 1 egg at a time until mixed. Add in the melted chocolate and both gingers. Fold in the dry ingredients and add the milk. Pipe into large ramekins up to the first line. Press down with a wet spoon so they have an even top.
Bake uncovered on combi 160° for 30 minutes checking after 20.

I am currently a school-based trainee at the summit restaurant at Mt Coot-tha .I have been working there for over a year. I work 2 days a week; go to tafe 1 and 1/2 days a week also while attending school. It took a lot of organising with the school to set it up, but eventually it settled down. I feel a school-based traineeship is a great way to help me in my future career as a chef.
